Today we’re making *Kete (Kətə)* – a traditional Azerbaijani pastry with a golden, flaky crust and a rich walnut (or hazelnut) filling. These pastries are buttery, fragrant with cardamom, and absolutely irresistible!
Perfect with tea or coffee, they’re simple to prepare and guaranteed to impress. 💛
📌 **Ingredients**
**For the dough:**
* 300 g all-purpose flour
* 100 g cold butter (cubed)
* 100 g natural yogurt (or sour cream)
* 2 tbsp brown sugar
* 1 egg
* ½ tsp salt
* 1 tsp baking powder
**For the filling:**
* 80 g walnuts (or roasted hazelnuts)
* 4 tbsp sugar
* 1 tsp ground cardamom
* ½ tsp cinnamon (optional)
* 20 g soft butter
* 1 egg yolk + 1 tsp milk (for brushing)
👩🏻🍳 **Preparation steps:**
1. Mix flour, sugar, salt, baking powder with butter until crumbly.
2. Add egg and yogurt, knead into dough. Chill 30 min.
3. Prepare the filling with walnuts, sugar, cardamom, and cinnamon.
4. Roll out dough, spread butter, sprinkle filling, and roll tightly.
5. Slice into pieces, brush with egg wash.
6. Bake at 180°C until golden brown.
